Apple Cranberry Clafouti Recipe from The Artist’s Inn, Lancaster PA

About a month ago, my husband and I decided that we needed to get away- It was a very stressful, busy month, and we just needed to decompress for a couple of days! We headed for one of our favorite destinations, Lancaster County, Pennsylvania. We enjoy driving through the peaceful country side, stopping at little shops, and staying in quaint country inns. We try to stay at a different place each time we go.

This time, we stayed at The Artist’s Inn, in Terre Hill.  We enjoyed sitting on our deck and looking over the beautiful gardens and countryside.

The innkeepers are Jan and Bruce. Bruce is a really clever, witty artist- his artwork is displayed in the main parlor, and it really made me chuckle!  He is also the author of several books. You can see more of his work here.

They have guest rooms in the main house, as well as a cottage and the Sister’s House which can be rented.

Jan is a fabulous cook- we had the most wonderful 4-course breakfasts! Blueberry pie and ice cream for breakfast! Jan has shared her recipe for one of our favorite dishes, clafouti. This recipe is for Apple and Cranberry Clafouti, when we stayed, Jan made it with fresh peaches from their peach tree out back. It was so good! The recipe is below. (Clafouti is a baked French dessert of fruit, traditionally black cherries, arranged in a buttered dish and covered with a thick flan-like batter, dusted with powdered sugar and served lukewarm.)

We really enjoyed our stay, it was just what we needed. We highly recommend The Artist’s Inn if you happen to be in the Lancaster County area- Tell Jan and Bruce that we sent you!

The Artist’s Inn Apple and Cranberry Clafouti

2 tablespoons butter

4 apples, peeled, cored and sliced

2 handfuls of cranberries

1/2 cup chopped nuts (any kind)

3/4 cup sugar

2 teaspoons lemon juice

 

1 cup flour

4 tablespoons sugar

1/2 cup milk

2 eggs

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon vanilla

1/2 teaspoon nutmeg

Preheat oven to 350.  In a glass 9 x 13 dish, place the butter.  Put it in the oven to melt while you prepare the apples.  Then place the apples, cranberries, and nuts in the glass baking dish.  Sprinkle with sugar and lemon juice.

Mix the rest of the ingredients together until just moistened.  Carefully spoon the mixture over the fruit.  Place it in the oven and bake for about 30 minutes or until the top is golden.  Serve warm with ice cream, whipped cream or a little maple syrup drizzled over the top.  Serves about 10.  Half the recipe will serve 6.
